What I eat in a day

Today I can finally show you what I eat in a day. I usually start my day with a smoothie or oatmeal, depending on my budget, the weather and generally just what I feel like. This time it was a smoothie made of 5 bananas, 4 dates, 2 cups of water, cinnamon, ginger, cardamom, turmeric and cloves.



I know I really need proper lighting, but that stuff is hella expensive, so I’ll have to make do for now.

Lunch was a simple stir fry consisting of udon noodles, napa cabbage (or Chinese cabbage), carrot, abura age (fried tofu pouches, mostly known from sushi), garlic, soy sauce and mirin. In the end I decided I wanted a thick sauce, so I added some corn starch.



Dinner was a tajine. For those who don’t know it a tajine (both the dish and the pot share the name) is a Moroccan earthenware pot which pretty much functions as a stovetop slowcooker and it’s amazing for lazy comfort food. Spices can really make or break this dish. It does take a while though, but trust me it’s worth it, specially with so little hands on time. I used some baby potatoes, frozen veggies, red lentils, a ton of garlic (in case you hadn’t noticed yet, we love garlic), ras el hanout (a Moroccan spice mix), cumin, turmeric, cayenne pepper and caraway seeds. I tossed in the potatoes, lentils, water, spices  and garlic and let it simmer for about 40 minutes, then tossed in the veggies (frozen veggies are precooked and therefore cook pretty fast) and cooked it for another 20 or so minutes.



It cooked dry, so I added more water, but it turned out to be to much, so I was worried it would be soggy, but once on our plates the lentils soaked it all up. It turned out to be a warming and filling, but yet surprisingly light meal. A tajine can be eaten on its own or served with couscous, rice or other cooked grains.

Now about that budget challenge, I decided to postpone that by a week. Firstly because I ordered a whole bunch of produce after not being able to for a couple of weeks, only to realize afterwards that it would only arrive a couple of days before the budget challenge and not an entire week, which I ordered for. Secondly because Vegfest would be right in the middle if I did not. And in my book low budget and Vegfest just don’t mix. I will try to blog about that as much as I can though, but I will be going as a volunteer, so I’m not sure how much I can. With a bit of luck I’ll be a photographer, so I can take pictures for here as well. So now I’ll start my budget challenge right after Vegfest. So that’s it for today, see you next time.
